Fondant simplicity

Traditional Christmas cakes are covered with a layer of marzipan before being topped with white fondant icing. If this is the route you want to go down, you can either choose a colourful and fun decoration or an elegant and sophisticated one.

Children love fondant figures such as snowmen, Santa or snowflakes, so why not embrace the festivity of the season and choose a cake with a snowy Christmas scene?

If you’re looking for a more grown-up look, cover your white fondant with glistening gold stars or fragile snowflakes marbled in white and blue icing.

Royal icing snow scene

There is no better icing to create the look of snow than royal icing, made simply by whisking icing sugar with egg whites.

Spread the thick white icing over the marzipan using a palette knife, but don’t worry about creating a smooth finish as you want to give a snowy effect by creating small peaks with the icing.

Add on your fondant figures if you want a fun decoration, or why not create shards of ‘glass’ by melting mints in the oven and adding a couple of drops of blue food colouring before the mixture cools? Once it has set, you can break it up into big pieces to create the cut glass effect.

Dairy-free cake

You might be catering for someone who is dairy-intolerant or vegan this Christmas, in which case you could opt for a dairy-free cake. As well as making sure the cake itself is made without any butter, it is important to give consideration to your icing.

Of course, the easiest thing to do is not have any icing, and simply decorate it with melted apricot jam and lots of delicious nuts and dried fruit, such as almonds, walnuts, Brazil nuts, apricots, cranberries, sultanas and pistachios.
