Straw Laughing Matter
The secret that allows an anti-gravity cake to stay upright is a carefully placed straw, and your choice of straw can mean the difference between success and failure.
Dedicated anti-gravity cake kits exist, but as long as you have a straw that bends and is strong enough to carry a wrapper, it should be enough.
Push the straw into the cake that will serve as a base and you have the platform to start creating the illusion.
Sticking Chocolate
As with most cake decorating, melted chocolate will be your adhesive but it needs to be the right consistency to ensure that you can create your optical illusion.
If your chocolate is too thick, it will not set properly, but if it is too runny it will trick down the straw and none of the sweets will stick to it.
Ideally, you want a consistency similar to tomato paste or toothpaste; thick but pourable enough to use with a pipette.
Patience Is Key
Like other hobbies involving glueing pieces into place, you need to have some patience when sticking the sweets to the straw. Only add a few at a time and wait for them to set before putting on the next layer of sweets to avoid collapse.
